Prep Time: 15 minutes
Cook Time: 5-10 minutes
12 dates (recommend Medjool)
4-5 tbs goat cheese
1 tbs fresh basil, chopped (about three leaves)
1/2 tbs dried oregano (or fresh if you have it)
6 slices bacon
1. Pit dates if necessary. If using pitted dates, slice dates open on one side.
2. Combine goat cheese, herbs and pepper in a small bowl. Stuff dates with filling.
3. Wrap each date in 1/2 slice of bacon and secure with toothpick.
4. Bake at 500 degrees. Check every two to three minutes to turn and see if ready. They are done when bacon is golden and crispy. Drain on paper towel.

These were excellent. I had a TON of leftover dates from making the crust for the Raw Vegan Chocolate Mousse Pie as well as some very nice goat cheese. I figured they would combine well and of course the internet said I was right. And who wouldn’t want to add bacon to the mix? I would definitely recommend keeping a good eye on these and not cooking them too long. I was busy with other things and I think I cooked them a little too long and melted the cheese too much, but they were still delicious. They make an excellent appetizer for a party since they are a good size and have the tooth pick built in!
