Serves 24
Prep Time: 15 minutes
Cook Time: 65 minutes
Ingredients:
Crust
3 cups flour
1/2 cup sugar
1/2 cup confectioners sugar (powdered sugar)
1 tsp salt
3 sticks butter, cut into tbs
Filling
6 eggs
1 tbs lemon zest (1 lemon)
1/2 cup lemon juice (3-4 lemons)
1 1/2 cups sugar
1/4 cup flour
1/2 tsp salt
Confectioners sugar for topping
Preparation:
1. For crust, combine ingredients in food processor until the consistency of wet sand. Press in to greased 9×13 baking dish and bake at 325 degrees for 45 minutes.
2. While crust is baking, whisk all filling ingredients together. Pour in to baking dish. Turn oven up to 350 degrees and continue baking for 20 minutes.
3. Allow bars to cool completely. Top with confectioners sugar and cut in to bars.

I was paging through my cookbook looking for a dessert to make and this seemed like the perfect combo for some hot Beef Stew. I’ve never made lemon bars that weren’t from a box before and it was worth squeezing all those lemons and laboriously pulling out lemon seeds. No matter how hard I try I still always manage to drop some seeds in. Any way, the bars are delicious. The filling is nice and tart with a good amount of sweet. The crust is flaky and buttery and awesome. I definitely recommend trying these out.
